Dia Dhaoibh a chairde,

Súil agam go bhfuil sibh uilig go maith. Gach rud go breá anseo sa chistin.

Deabhal mórán scéalta le gairid ach gur tháinig mé trasna ar mhias nua blasta agus mé amuigh le cairde aréir.  Is minic liom ithe i mbialann Indiach mar go dtaitníonn an cineál sin bia chomh mór liom.

Caithfidh mé admháil dhaoibh nár tháinig mé trasna ar an Dosa roimhe seo agus bhí cineál iontas orm faoi seo, ní hé go bhfuilim i mo chonaí i bpluais 🙂

Ar aon nós is pancóg tanaí atá sa Dosa breá seo agus é lionta le rudaí difriúla. Bhí an ceann a bhí agamsa aréir líonta le meascán spiosrach de ghlasraí agus fataí.

Bhí sé thar barr agus bhí cineál fonn orm é a thriall sa bhaile ach ag breathnú ar an oideas seo a fuair mé ar líne breatnaíonn sé go bhfuil go leor trioblóid ag baint leis.

Seans go ndéanfaidh me iarracht lá breá éigin ach go dtí sin seo oideas a fuair mé ar an idirlín ar ball má tá aon duine agaibh níos misniúla ná mise.

Hello foodies 🙂

Hope you are all well 🙂 Just posting to share a little story with you all.

I went out for dinner last night as it was the birthday of a friend. We ended up heading to an Indian restaurant which is actually one of my favourite cuisines especially as it has quite a lot of veggie options.

Well imagine my surprise when i discovered a type of dish I hadn’t tried before!

The Dosa!!!!!

It was a lovely crispy pancake with a delicious mildly spiced potato filling in the centre.

I thought I might try it at home but on closer inspection seems to be quite complicated and troublesome, however I did think I should inform everyone about my discovery or maybe everyone already knows and I’ve been living under a rock 🙂

Súil agam go bhfuil sibh ar fad go maith an deireadh seachtaine seo agus ag déanamh rudaí spéisiúla.  Mise sa bhaile ag déanamh marmaláid an deireadh seachtaine seo.  Feicfidh muid!!! 🙂

Ar aon nós bhí ceapaire álainn agam le gairid i mbialann beag do mo lón agus mheas mé go raibh sé chomh deas sin go ndéanfainn é dom féin sa bhaile agus go gcuirfeadh mé sibhse ar an eolas faoi chomh maith.

Níl mórán le déanamh i ndáiríre, beidh ort ubh a bhruith, sailéad de dhuilleóga deasa a roghnú agus arán deas a cheannach (nó a bhácáil).

An rud is tábhachtaí faoin t-arán ná go mbeidh tú ábalta píosa breá tiubh a ghearradh dhe.  Is iad na rudaí eile a bheidh ag teastáil uait ná abhacáid amháin, roinnt salann agus piobar agus liomóid amháin.

Nuair atá píosa arán gearrtha agat, leag air roinnt mhaith den abhacáid, beidh sé níos deise má ghearann tú i slisíní é agus má leagann tú slisíní den ubh bhruite anuas ar an t-arán le chéile.

Is anuas air seo a bheidh an sailéad le leagan.  Roghnaigh mise duilleoga deasa, spionáiste, miontas,  basal, peirsil & srl agus is féidir leat roinnt bheag ola olóige agus beagáinín sú liomóide a dhóirteadh anuas air.  Measc go maith an sailéad agus leag anuas air an t-arán é ar bharr an meascán eile.

Sin  é i ndáiríre, tá sé an-bhlasta agus breathnaíonn sé go hálainn má dhéanann tú iarracht ar bith leis.

Avocado, egg and mixed leaf open sandwich

Hello folks!

Hope everyone is enjoying the weekend.  I had a feeling you might all be starving so thought I might quickly post a little snack for you all.

Here is a sandwich I had recently in a lovely cafe, and it was so delicious I felt I had to recreate it for you.  I added an egg to the recipe for more flavour and also for some colour.

All you need for this one is a nice loaf of sturdy bread, you can choose yourself but it should be something you can cut a thick wedge off.  I used a rye sourdough,  simply because I came across a nice loaf in the supermarket.

Now if you have time to boil an egg for this sandwich it definitely adds to it, but no matter if you can’t or you don’t want to.

Layer the bread with a generous amount of avocado and sprinkle a tiny bit of salt and some cracked black pepper over it.

If you are using an egg cut it into wedges and layer it on to the bread as well, it looks prettier if you place the two ingredients haphazardly on the bread.

I bought a nice arrangement of mixed leaves but you can buy what you like, I personally think a mix of any of these leaves will work – spinach, flat leaf parsley, chard, basil, mint … the list goes on.

When you have made your choice of salad leaves, dress them lightly with some olive oil and some lemon or lime juice and add the mix roughly on top of the avocado and egg mix.

It  looks really pretty and it is definitely incredibly delicious.

Seo ceann deas agus s’én rud a thaitníonn liomsa faoi ná go líonann sé suas tú mar gheall ar na sicphíseanaigh . Is béile deas é le déanamh do chairde mar go mbreathnaíonn sé go deas de bharr na dathanna difriúla atá ar na glasraí éagsúla.

Céard a theastaíonn:

2/3 dhornán Spionáiste
Oinniún dearg (ceann beag)
Canna amháin Sicphíseanagh
10/12 trataí silín (Gnáth thrátaí go breá freisin)
Oráiste amháin mór nó dhá cheann beag
Claibín ola olóige
2 spúnóg mhór sú oráiste

Tá an ceann seo thar a bheith éasca agus an-sciobtha le déanamh.

Gearr na glasraí agus na torthaí ar fad réasúnta beag agus cuir i mbabhla iad le chéile. Déan cinnte nach bhfuil aon síolta fágtha sna horáistí. Déan cinnte go bhfuil an craiceann ar fad bainte de fiú an chuid bán (pith).

Dóirt isteach na sicphíseanaigh, bíodh said nite go maith agat roimhe seo.  Anois is féidir leat an ola agus an sú oráiste a dhóirteadh isteach sa meascán. Má thaitníonn leat roinnt salann nó piobar a úsáid ar aghaidh leat ach tá an sú oráiste foirfe leis an sailéad seo measaimse.

Nuair atá sé measctha go maith is féidir leat an spionáiste a chaitheadh isteach anois agus é a mheascadh go maith.

Níl le déanamh anois ach é a ithe !!

Healthy chickpea and orange salad.

When the word salad is mentioned people often think, diet or boring and visualise iceberg lettuce, cucumber and tomatoes on a plate (no offence to any of the veggies mentioned) . Salad doesn’t have to be boring and with a little imagination can be a delicious nutritious and healthy meal.

I love this particular salad because I adore all the ingredients and I think they are an interesting but tasty combination. The chickpeas help one to stay full and satisfied for longer and the orange helps curb cravings for sweets later (hopefully).

What you need:

2/3 handfuls of spinach (I prefer baby spinach)
1 medium red onion
1 can of chickpeas
10/12 cherry tomatoes
One large orange or two small oranges
A thimble of olive oil
2 large tablespoons of orange juice

This salad is easy peasy and all you really need to do is to chop the fruit and vegetables into small pieces.  You should chop the onion quite small as it’s a very strong taste but everything else can be bite size, its prettier that way.

Put them all together in a bowl adding the chickpeas (which you will have rinsed thoroughly at that stage). You can dress the salad now but just adding the oil and the juice and mixing them about until they are entirely covered. Next you can mix in the spinach taking care not to bruise it too much.

All you need to do now is to sit down and eat it. YUM!
